It took a little bit of trial and error, but I think we came up with a pretty darn delicious sauce that you will LOVE. Stir well and bring to a gentle simmer, then mix in the cornflour mixture. Add the tamarind and water mixture, the salt and cashews. Add the cauliflower and the finely chopped coriander stalks and toss well. Add all the spices, stir and cook for 2 minutes. We made this tamarind cashew sauce after absolutely loving the one that they had at Cheesecake Factory. Heat the oil or ghee over a medium heat in a large saut pan or casserole dish. I have seen recipes for this that call for it to be processed until it's more of a paste but I prefer it to be in small pieces - do whichever you think you'd like better. Easy Side Dishes There are a few things better than a delicious sauce. Blend with short bursts until the mixture is well blended, and the cashews and garlic have been chopped into very small pieces. Combine first 7 ingredients (cashews, cilantro, garlic, onions, sugar, pepper and cumin) in a food processor.
